This garlic butter skirt steak is juicy, flavorful, and cooked to perfection on the grill. A simple marinade enhances the beef’s natural taste, while a rich garlic butter sauce takes it to the next level.

For the Marinade:
- 1 ½ lbs skirt steak
- ¼ cup olive oil
- 2 tbsp soy sauce
- 2 tbsp Worcestershire sauce
- 3 cloves garlic, minced
- 1 tsp smoked paprika
- ½ tsp black pepper
For the Garlic Butter:
- 4 tbsp unsalted butter, melted
- 2 cloves garlic, minced
- 1 tbsp fresh parsley, chopped
- ½ tsp salt
Instructions
- In a bowl, whisk together the olive oil, soy sauce, Worcestershire sauce, garlic, smoked paprika, and black pepper.
- Place the skirt steak in a resealable bag and pour in the marinade. Refrigerate for at least 1 hour (or up to 12 hours).
- Preheat the grill to high heat (450–500°F).
- Remove the steak from the marinade and pat it dry. Grill for 3–4 minutes per side for medium-rare.
- While grilling, mix melted butter, garlic, parsley, and salt.
- Once the steak is done, let it rest for 5 minutes. Brush with garlic butter before slicing against the grain.
Notes
- Don’t overcook: Skirt steak is best at medium-rare to medium for tenderness.
- Let it rest: Resting the steak before slicing allows the juices to redistribute.
