Wet Ingredients:
- 1 pint fresh oysters (with liquor)
- 2 cups whole milk
- 1 cup heavy cream
- ½ cup seafood or chicken broth
- 2 tbsp unsalted butter
- 1 tbsp lemon juice
Dry Ingredients:
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- ½ tsp salt (or to taste)
- ½ tsp black pepper
- ¼ tsp cayenne pepper (optional)
- 1 tbsp chopped fresh parsley
Instructions
- In a pot, melt butter over medium heat. Sauté onion and garlic until soft.
- Add seafood broth and oyster liquor, bringing to a simmer.
- Stir in the oysters and cook until their edges curl (about 2–3 minutes).
- Lower the heat and add milk and heavy cream, stirring gently.
- Season with salt, pepper, and cayenne. Let simmer (do not boil) for 5 minutes.
- Finish with lemon juice and fresh parsley. Serve warm!
