Creamy Oyster Milk Stew

 

A rich, comforting soup made with fresh oysters, milk, and butter—perfect for a cozy meal!


Ingredients

Wet Ingredients:
  • 1 pint fresh oysters (with liquor)
  • 2 cups whole milk
  • 1 cup heavy cream
  • ½ cup seafood or chicken broth
  • 2 tbsp unsalted butter
  • 1 tbsp lemon juice
Dry Ingredients:

  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • ½ tsp salt (or to taste)
  • ½ tsp black pepper
  • ¼ tsp cayenne pepper (optional)
  • 1 tbsp chopped fresh parsley

Instructions

  1. In a pot, melt butter over medium heat. Sauté onion and garlic until soft.
  2. Add seafood broth and oyster liquor, bringing to a simmer.
  3. Stir in the oysters and cook until their edges curl (about 2–3 minutes).
  4. Lower the heat and add milk and heavy cream, stirring gently.
  5. Season with salt, pepper, and cayenne. Let simmer (do not boil) for 5 minutes.
  6. Finish with lemon juice and fresh parsley. Serve warm!

Tips: Pair with crusty bread for a delicious meal.
