- 1 tbsp lemon zest
- 3 cloves garlic, minced
- 1 tsp dried oregano (or 1 tbsp fresh)
- 1 tsp dried thyme (or 1 tbsp fresh)
- ½ tsp dried rosemary (or 1 tsp fresh, chopped)

- ½ tsp paprika (optional, for color)
For the Chicken:
- 4 boneless, skinless chicken breasts (or thighs)
- 1 tbsp olive oil (for cooking, if pan-frying)

Instructions
Marinate the Chicken – In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, herbs, salt, pepper, and paprika. Add the chicken and coat well. Cover and marinate in the fridge for at least 30 minutes (or up to 8 hours for more flavor).
Cooking Options:
- Grill: Preheat the grill to medium-high heat (375-400°F). Grill chicken for 5-7 minutes per side or until the internal temperature reaches 165°F (75°C).
- Pan-Fry: Heat 1 tbsp olive oil in a skillet over medium heat. Cook chicken for 5-6 minutes per side, until golden brown and cooked through.
- Bake: Preheat oven to 400°F (200°C). Place chicken on a lined baking sheet and bake for 20-25 minutes, depending on thickness.
Rest & Serve – Let the chicken rest for 5 minutes before slicing. Garnish with extra lemon slices and fresh herbs.
